Muse Restaurant opened in Pokolbin in 2009 and has held its place among Australia's leading dining rooms. Chef and owner Troy Rhoades-Brown writes each menu around the season, much of the produce drawn from his own garden, the rest from the Hunter Valley growers and producers he has worked with, and championed, for years.
At Muse, hospitality sits at the centre of the evening. Service is warm, unhurried, attentive, tuned to the pace of each evening. The kitchen follows the same sensibility: inventive where it should be, restrained where it needs to be, always true to the produce and to those who grow it.
